Off the main drag in downtown Tulum and only a stone's throw away from the Caribbean waters of Mexico’s prized Yucatan lies Gitano Bar and Restaurant. Tulum as a whole embraces the up-side-down and inside-out feel that contrasts a traditional resort town. 'No roof, no grid electricity, no central plumbing, no problem,' say the locals. It’s a raw and charming experience complete with insect repellent on hand at every stop in the village.
You enter Gitano through 'The Garden of Love,' the renowned jungle bar, full of frames, floorboards, and tables made from the wild jungle woods of Tulum. Under a makeshift canopy are swaying palms, dangling lights, even a disco ball. This is where the staff gather to have their pre shift meal together.
The staff are just as naturally inspiring as the setting. A talent pool of chefs, managers, servers, and world-class mixologists, hailing from Europe, Canada, USA and all through Central and South America make up the team. The atmosphere is truly family-like and jubilant: akin to putting 25 best friends together for a working shift. Everyone is genuinely happy who works here, and they want this infectious mood to flow into the guests.
Before opening, the team gathers for a communal style family meal. They discuss the local happenings, specialty menu items, expected guests, village gossip, and everything else under the Mayan sun. Gitano is all about sharing happiness with our staff, guests and anyone who comes and joins us here.
Chef Fabian is constantly mixing up the staff meals with fresh energy, concepts and recipes from all over the planet. The day before they were served a Thai mushroom soup and a tropical kale salad. Today it is a more traditional style local fare of tacos with chicken, beans and in season vegetables and greens.
Gitano’s mission is to share happiness. From the members to the staff to the customers and anyone who finds themselves in this garden of love.
